    We are clearing these at 1/2 price as Best By date was this past Aug, although they will still be good to use for several months after that.
    Method for Great Ribs:
    - Remove white membrane off the back of the rack by pulling off with a paper towel.
    - Generously Shake on one of our Rubs on the meat side: CHERRY RUB, SWEETnSMOKEY CAJUN, MAPLE CAJUN, or KOSMOS DIRTY BIRD.
    - Smoke about 3 hrs at 225F/107C on charcoal with an Apple and a Cherry Chunk smoldering against the coals.
    - At about 160F/71C take Ribs out and wrap in PINK BUTCHER PAPER and put back in Smoker for a couple hrs.
    - At approx 190F/88C remove from Smoker, press toothpick into meat side and it should retract easily without liftIng Rack.
    - Place Rack meat side down and cut through back, into single Ribs.
    - Turn over Ribs and generously brush RIB GLAZE on  and watch it set into a shiny Glazed coating.
    - Wait 5 mins if you can, then Enjoy!
