Mallee Root:___ _Ancient Aussie flavour for Chicken, Beef, Lamb.
Red Box:________Best with Pork, colours meats red. Turn grey lamb chops into red pork chops!
Ancient Red Gum: 200-300 yr old Trees. Slightly sweet Hickory flavour with hints of Vanilla and Tawny Port. These are precious offcuts from making our ANCIENT RED GUM CUTTING BOARDS.
Red Gum:_______aka Aussie Hickory, strong flavour for all foods but can oversmoke and dry out Brisket.
Red Ironbark:___ Mild smoke for all foods. Most Restaurants use it for a mild generic smoke flavour.
Tea Tree:_______ Mild earthy woody flavour for Fish and Chooks. Aboriginals & Maoris love it.
